Stuffed Peppers


Salut mes beaut├ęs intelligentes! A brief history on these - Stuffed peppers or piemientos rellenos are part of the traditional Spanish cuisine. Furthermore, it exists in different names and forms around the world - India, Mediterranean, America, Mexico, Middle East and so forth.

The other day, my brother made some, and it was the first time I ever had it! He was nice enough to have me share this recipe on here, which also means I get to make more of it when I'm back in New York. :)

Today's recipe is going to be slightly different, *drum roll*, I'm including pictures! Lol. Hopefully they bring more clarity to your cooking. Enjoy :D

Prep Time: 30 mins
Cook Time: 30mins
Yield: 6 servings

INGREDIENTS

- 6 bell peppers
- Salt and pepper to taste (we added some maggi, curry and thyme. Yes, we love spicy food! But the additional spices are optional).
- 1 pound of ground beef
- 1/3 cup of chopped onion
- 2 teaspoons of minced garlic
- 1 teaspoon of Worcestershire sauce
- 1/2 cup of uncooked rice
- 1 cup of shredded Cheddar cheese
- 1/2 cup of water
-  1 can of whole peeled tomatoes
- 2 cans of tomato sauce ( or condensed tomato soup)

Step 1

Cut the top of the peppers and remove the seeds.


Step 2

Boil the peppers in a large pot of salted water, and sprinkle salt in each pepper.

Step 3

In a large skillet, fry the onions and garlic.

Step 4

Add the beef, and saute for five minutes until the beef is browned. 

Step 5

Stir in the rice, tomatoes, 1/2 cup of water and Worcestershire sauce. Cover and let it simmer for 15 minutes, until rice is tender.







Step 6

Remove from heat, and stir in the cheese.


Step 7

Preheat the oven to about 350 degrees F, and then stuff each pepper with the beef and rice mix. Place the peppers with the open side up in a baking dish while doing so.

Step 8

In a medium bowl, combine the tomato sauce with a little water to make a gravy consistency. Pour this over the peppers.



Step 9

Bake for about 35 minutes, until the peppers and properly heated through, and the cheese is melted and bubbly!

And you're done! You can eat this with rolls, had mine with Hawaiian rolls, which I highly recommend!

This Week's Nerdly Beautiful: Georgina Chapman



The beautiful Georgina Rose Chapman, is a 35 year-old award-winning English fashion designer, actress, and the co-founder of one of the most coveted fashion lines today, Marchesa. Her brand has been worn by a number of actresses on the red carpet, such as: Penelope Cruz, Kate Hudson, Jennifer Lopez, Blake Lively, Rihanna and so many more! She is also a film director, mother to two, the wife of film-studio boss, Harvey Weinstein and a judge on Project Runway: All Stars!

Being one of the most photographed women in New York City, I'm amazed by her ability to pull off all colors, and her understanding of how a woman ought to feel in a dress. Her ambition, effortless style and elegance, always leave me in a state of awe (literally, haha). Her looks are very feminine and embellished with a touch of Cinderella-at-the-ball fantasy about them. I hope that I someday get to wear some of her exquisite pieces! :D

The Nude Dolly Dress

Salut mes beautes intelligentes, and Happy New Year to you all! 

This outfit is a bit of a throwback, as I wore it a couple of weeks ago, but I thought I'd share anyway! My favorite things about this dolly dress are the brilliant embroidery, the beads embellishments and the gentle pleats. I feel like a fairy-tale character whenever I have this dress on, like the princess of some magical castle!(Ok, maybe that's a little over-board, but you get the gist).  I'm starting to notice a trend in my style (a recent development), but I find myself gravitating towards pieces with intricate beading! I just can't get enough. You can't blame me really, what's not to adore about them? :)


Forgive the quality of the pictures below, they were taking with my phone, and don't truly capture the beauty of the dress. I thought I'd show you what how I styled this dress in addition to the detailed pictures above. I opted for an all nude look, with nude heels and a nude purse, but in order to prevent looking too washed out, I wore this red fall jacket. I love that it is close in length to the dress!



 Oh, one more thing! I picked up this phone-case/wallet from Victoria's Secret, and I just thought I'd share how helpful it has been, in case someone's looking for a good phone case (you see how I always look out for y'all? Lol). Being quite clumsy (yes as you must have figured, I drop my phone a lot), I had been on a hunt for a good phone case that covers the phone screen, preventing it from cracking. However, most of the "heavy-duty shielding" cases just weren't for me in terms of style. So far, this case has been an amazing! I have had it for about six months, dropped my phone a couple of times, and not a single scratch, win!! I love that it also serves as a wallet and a clutch.
